Course description:

This is a theory course and is designed for anyone who in the course of their work may come into contact with areas where food is prepared, cooked and handled. This course is aimed at those employees who are new to their role and is particularly focussed on care and nursery staff or those working in similar settings. It is structured to give learners an in-depth knowledge of good food hygiene and safety issues and meets food industry recommendations, with reference to employees preparing, cooking and handling food in their work environments.

Food Safety Law and Enforcement

Food safety law / enforcement / employee's responsibilities / due diligence

Food Safety Management Procedures

Hazard analysis Critical Control Point (HaCCP) / spoilage and preservation / stock control / rotation / Chilling/ cooling / Cleaning and disinfection

Food Handlers and Personal Hygiene

Hand washing / Personal Protective equipment (PPe) / Cross contamination / Fitness for work

Food Pest's and Control
